- LOOK: Once you have poured a little wine into a glass, hold it against a white tablecloth or the light and look for its brilliance. Clarity is a good sign.
- SWIRL: Swirl the wine in the glass – easy does it – to release the aroma by bringing oxygen into contact with your chosen grape juice.
- AROMA: A connoisseur can tell by the smell of a wine whether it is good or not. Hold the glass up to your nose and inhale deeply. With practice, you will be able to pick up different characteristics, such as spices, fruit, tobacco, herbs and so on.
- SIP: Drag as much air as you can into your mouth as you sip a wine and let the wine roll over your tongue, from side to side.
- SAVOR: Enjoy the taste and remember it. It doesn’t take a lot of practice before you can tell immediately whether a wine has good body and is well balanced or should be used for cooking.
- SWALLOW: Swallow and enjoy.

It was 3,000 years ago that Confucius Culpepper distilled rice and millet in China and produced sautchoo, the world's
first alcoholic drink. And the search for a cure has been going on ever since. So we are left with suggestions such as
those from Turkish cook, Remzi tok, who recommends iskembe (tripe) soup.
Here are a few others:
Boston hotelier Jose Campo: "A slightly different hair of the dog – heat orange juice with some lemon,
honey and a little cognac."
Hawaiian voodoo tradition: "Stick 13 pins into the cork of the bottle you were drinking from."
English Middle Ages tip: "Take one spiced eel sprinkled with almonds."
Fisherman's suggestion: "Oysters, honey and ginger with a can of Kokanee beer."
